Sage & Garlic Chicken Patties

This is one my favorite patty recipes for a quick and easy breakfast.  I usually have these with my Office Breakfast.  I make these in big batches along with my Thyme, Sage, & Rosemary Beef Patties and my Mint & Rosemary Lamb Patties.

Sage & Garlic Chicken Patties Recipe:

4 Pounds of Ground Chicken

1/2 Cup Finely Chopped Onion

8 Cloves of Minced Garlic 

9 Tablespoons of Finely Chopped Fresh Sage

1/2 Cup + 2 Tablespoons of Coconut Flour

2 Teaspoons Sea Salt

1 Teaspoon of Pepper

Epic Beef Tallow (Cooking Fat as Needed)

Heat about 1-2 tablespoons of beef tallow in a cast-iron skillet on medium heat.  Add the onion and cook for about 5 minutes, or until translucent.  Add the garlic and sage and continue cooking for a couple of minutes, until fragrant.  Take the skillet off the heat and let cool.  In a large bowl combine all the chicken, onion/garlic/sage mixture, salt, pepper, and 2 tablespoons of coconut flour.  Mix well and form into about 24 patties.  Lightly coat each side with the remaining coconut flour. Heat about 1-2 tablespoons of beef tallow in a cast-iron skillet on medium heat. Cook the patties about 10-15 minutes per side, or until nicely browned on the outside and cooked throughout.  Serve immediately, or once cooled, you can freeze them too.
