Mint & Rosemary Lamb Patties

Originally included in my Office Breakfast recipe, I make these in big batches along with my Thyme, Sage, & Rosemary Beef Patties and my Sage & Garlic Chicken Patties.

Mint & Rosemary Lamb Patties Recipe:

4 Pounds of Ground Lamb

2 Tablespoon of Finely Chopped Rosemary

4 Tablespoons of Finely Chopped Fresh Mint

3 Teaspoons of Sea Salt

1 Teaspoon of Black Pepper

1 Teaspoon of Lemon Zest

Epic Beef Tallow (Cooking Fat As Needed)

In a large bowl combine all the ingredients and form into about 24 patties.  Heat about 1-2 tablespoons of beef tallow in a cast-iron skillet on medium heat.  Cook the patties about 6-8 minutes, or nicely browned on the outside and cooked throughout.  Serve immediately, or once cooled, you can freeze them too.
