Lyn’s Cheese Ball

My mom’s friend Lyn makes the most delicious cheese ball every year around Christmas. And every year, I would steal it and leave one bite for my mom. With the holiday season upon us, and not being able to tolerate real cream cheese, I set my sights on recreating her cheese ball recipe. Maybe now my mom will get more than one bite of Lyn’s original one.

Cheese Ball Recipe:

2 Green Valley Organics Lactose Free Cream Cheese

1 Cup Crushed Pineapple (Drained)

1/4 Cup Chopped Green Pepper

2 Tablespoons Chopped Onion

1 1/2 Teaspoons Sea Salt

1 Teaspoon Dry Mustard

1/4 Cup Sliced Almonds

Crackers of Your Choice (I used Livin’ Spoonful Sprouted Crackers)

Combine cream cheese, pineapple, green pepper, chopped onion, sea salt, and dry mustard in a large bowl and stir until fully incorporated.  Using an 8-inch pie pan, scoop the cream cheese mixture into the dish and smooth the top out until level.  Sprinkle the sliced almonds over the entire dish. Place plastic wrap over the top and chill in the refrigerator overnight or for at least 6 hours. Serve with your favorite crackers.
